The Aszú wines are the differentiating factor of this family of great wines. They combine tradition, innovation and excellence, and become sublime wines with their roots in a unique terroir.
Oremus is the symbol and example of the rewarding of time, experience and knowledge, of the real expertise in the art of wine.
The production of the Aszú wine (wine of tears) is a meticulous process, which requires great patience and extensive know-how. It is only possible in good vintages, when nature brings rain at the end of the summer and sun and wind in early autumn, which are the essential conditions for the process for noble berries to from. The berries swollen due to the humidity split and the "Botrytis cinérea" establishes in its skin and creates the noble rot.
The same formulas are used to make the wines as have been used for hundreds of years.
To the must in a Gönc barrel, that is 136-litres, 3, 5 or 6 23-kg panniers ("puttony" in Hungarian) of Aszú noble berries. The Aszú noble berries are macerated with the must and we then wait for one day or two for the berries to swell and they are then pressed.
The fermentation of the Aszú must is a slow process that can sometimes last up to two months. It is then put into wood barrels and is left in a protected wine press, waiting for the fermentation to stop by itself. We then add a little Eszencia, which has been collected drop by drop from the Aszú berries. We thus symbolically return its soul, which is embodied in the Eszencia.
The Aszú wines are aged in 136-litre (called "Gönc") and 220-litre ("Szerednye") small barrels. Oak from the mountains that border the winemaking region is used to manufacture the barrels. The Aszú ageing takes place in underground wineries dug out in the volcanic soil. The wine is left to age here for 2 to 3 years, at a constant temperature and degree of humidity. After being bottled, the Oremus Aszú is left to continue ageing in the bottle for a year, which is the opportunity for it to embark on a journey of development that can even last several decades.

The winter was cold in January with below average temperatures, and the vineyard was protected by winter snow. Spring developed with moderate weather, dry and normal for the time of year, which brought early budbreak and no precipitation. Normal summer temperature, average rainfall in good dispersion and early development of the vineyard. Autumn was excellent, perfect ripening, favorable weather for harvest and good conditions for noble rot development, cold nights with sunny days and no significant rainfall.

Winter was long and cool followed by cold showers in the month of February while a dry and mild spring provoked an early bud break of the Furmint vines starting 8 April. Flowering took place in early June and a dry season was ideal for the fruit set. Temperatures in summer were mild with scattered showers all throughout the summer months. An early and quick ripening favored the wine with rich aromas and balanced acidity. Abundant precipitation at the beginning of September contributed in the high quality of the Aszú grapes.

After a mild January, snow arrived in February which was colder than usual. The spring was soft with early sprouting. Summer was exceedingly dry and hot. The warm weather continued in September causing a rapid ripening. Due to a dry October, Botrytis only set in those vineyards where microclimate was rather humid. 2015 turned out to be a relatively short vintage in terms of quantity, but quality was excellent, the sweet wines exert extreme fruitiness along with a velvety smooth mouth-feel and balance.

A non-typical winter with soft temperatures and an extraordinary dry December brought forward a rainy beginning for 2014. A warm spring accelerated plant growth provoking the cycle to be two weeks early. Due to a mild summer with intermediate showers, ripening recovers its normal pace.
Rain is a constant in autumn and mild temperatures help in the formation of the Botrytis. Selection at harvest was vital with yields as low as 280 kgs per hectare which marked the crispy, fruity style and refreshing acidity, hallmark of Aszú wines.Storage, serving and drinking window

Winter was mild with abundant precipitation helping in an ideal underground water reserve to start the vegetative cycle. Rain persists in June though July and August were dry and warm with some rainstorms and hail. Autumn was mild accompanied by cold nights and sunny days that highlight the typical acidity of the region. Classical vintage to produce excellent Aszú grapes.
After 2008 vintage, 2013 was the millenium´s second greatest vintage year for sweet wines. Extraordinary in quality and quantity.

After a cooler and drier winter than usual, spring weather was similar to other harvests. Summer was warmer and drier as well, resulting in early ripening. Warm and dry weather continued in September and October avoiding the development of Botritis due to poor weather conditions. Harvest was nearly 3 months long and yield was lowest in this decade.

The Tokaj region, Tokaj-Hegyalja lies within the range of mountains in north-east Hungary. The village of Tolcsva and the Oremus winery are located at the geographical heart of said region containing clay soils on weathered andesite and rhyolite tuff.

The year was definitely the toughest challenge for Tokaj vinegrowers in the past decade. Late spring and early summer precipitation flooded the surroundings of Oremus in two occasions. Persistent rainfall during the summer and some hail in August, affected several plots which caused considerate crop loss.
Rain finally stopped during harvest and Botrytis began to develop on the remaining grapes.
Due to a cool growing season, there was enough acidity in the grapes to produce sweet wine with a classic "Tokaj" balance. Remarkable acidity and fresh citrus aromas characterizes this vintage.
